Spring Fever Ginger Honey Lemon Tea

I love this simple recipe for a nice hot ginger-lemon tea. It makes me think of spring everytime I sip it.

Ingredients~
1 inch or so of ginger root, roughly chopped
1 lemon wedge
1teaspoon of honey to taste
8 oz. of water

Directions~
Bring water and ginger to a boil, then lower flame and add lemon (squeeze then drop in) and keep at a low simmer for a few minutes. Strain ginger out of liqued. Pour into a mug and stir in the honey. This is also a great tonic for flu season and is a nice sore throat soother. Enjoy!
